Season with salt and pepper and season the pancetta with the paprika.
Place it in a pan with a little water and oil, cover it with foil and bake it for about 1 hour at 170º C until it softens well, adding liquids if necessary.
In another bowl, mix the honey, mustard and a little water.
15 minutes before removing the pancetta from the oven, pour the sauce over it, remove the foil and bake it at 170º C, leaving it to caramelize.
